PAIRING: Great with different Spanish meat tapas, but also as apertif.
WINE MAKING: 100% destemmed and soft grape pressing. Alcoholic Fermentation in stainless steel tanks and resting with its lees during 3 - 4 months.Batonage during first month after fermentation.
BARIQUE AGING: 6-9 months in well-used French oak.
BOTTLE AGING: 6 – 9 months before selling.
